Railroad Museum of Pennsylvania-great collection of PRR equipment, many of which may have roamed the rails in New Jersey
Strasburg Railroad-steam train rides in Dutch Country, across the street from the Railroad Museum of Pennsylvania
Baltimore & Ohio Railroad Museum-great collection of B&O, C&O and Chessie System equipment, some of which used to access New Jersey. Plus they have CNJ camelback 592 and CNJ 1000, the first commercially used diesel. Both locomotives are stored in the roundhouse. (Definitely worth the trip.)
Steamtown National Historic Site-located in Scranton, PA on the former DL&W main line, Steamtown provides a great variety of steam locomotives
